These are super easy to whip up and so much healthier than store-bought granola bars.
It is much easier to control the ingredients when you bake or cook yourself. For the past two years I have had to do this for my son Gavin's food allergies and sensitivities.
Note for nursing mamas: add flax meal and brewer's yeast to help keep up with your milk supply!
The great things about this recipe is you can really make it your own and add ingredients that speak to you. Enjoy!
No Bake Energy Bites
Ingredients:
1 cup Gluten Free Rolled Oats
1/4 cup Hydrolyzed Collagen Powder
1/4 cup Coconut Flour (Nursing mamas: sub-in flax meal)
1/2 cup Sunflower Seed Butter (or nut/seed butter of choice)
1/4 cup Pure Maple Syrup (or natural sweetener of choice)
1/4 cup Dark Chocolate Chips
Directions:
Combine all in a bowl (in order above) and stir with spoon.
Refrigerate for about 1 hour, take out and roll into individual balls.
Serve or save in fridge for later!
Variations:
Note: You may need to add a tablespoon or two of water if too dry.
Nursing mamas: add 1 scoop of brewer's yeast.
Optional: coat with organic shredded coconut.
Skip the rolling and just eat with a spoon :)
