Soaked Rice

Soaked Rice



Ingredients:

  • 2 cups of organic rice (white, brown, wild)

  • 4 cups of filtered water

  • 1/4 tsp of sea salt

  • 1 teaspoon of lemon juice or apple cider vinegar



Directions:

  • Combine all ingredients into a glass bowl and leave out on counter for 12-24 hours (minimum 4 hours) prior to cooking.

  • Rinse rice in a strainer, removing the water you soaked it in previously.

  • When ready to cook bring fresh, filtered water to a boil and then add the newly soaked rice. Cover pot and turn off stove and let rice cook/steam until fluffy and all liquid has evaporated.

  • Serve immediately.



Notes/Variations:

  • When cooking, be sure to use less water than the package directions as the rice has now retained water. Your rice will now also cook much faster.

  • Instead of cooking with fresh, filtered water you can try cooking rice with an organic meat stock or broth (after soaking of course).

  • Add to soups, stews or add pastured butter, herbs and raw cheese for a side dish.


*Always use organic, local and natural ingredients whenever possible.
